Easy and tasty breakfast! Tater Tot with Bacon Egg and Cheese, recommended by Bemorepanda.

 

Ingredients:

 

1 pack of frozen potato chips

4 egg yolks

1 tablespoon of lemon juice

1/2 cup unsalted butter, melted

pinch of salt

Pinch of cayenne pepper

8 slices of Canadian bacon

2 teaspoons of white vinegar

8 eggs

 

 

Preparation:

 

Cook the tater tots according to the directions in the package.

 

While the tater tots are cooking, make hollandaise sauce. In a stainless steel bowl, whip the egg yolks and lemon juice until thick and double the volume.

 

Place the bowl over a saucepan with barely boiling water. Make sure the water doesn't touch the bottom of the bowl. If the eggs get too hot, they'll stir.

 

Slowly drizzle over the melted butter, stirring constantly. (It's a good idea to lift the bowl every minute to make sure it doesn't get too hot.) When all of the butter has been added and the sauce has thickened and doubled in, remove it from the heat and stir in the cayenne pepper. and salt Keep warm until serving. If the sauce gets too thick before serving, add a little warm water. You will know it's ready when you run a whisk through it and see the bottom of the pan.

 

Cut the Canadian bacon into thin strips and cook it in a lightly greased non-stick pan until lightly browned.

 

Fill a pan with a few inches of water and simmer. Add vinegar.

 

Break the eggs one at a time in a tea cup or small bowl. Slowly lower the tea cup into the water and slide the egg into the water. You can use a spoon to push the egg white closer to the center of the egg.

 

Poach the eggs for 3 to 3 1/2 minutes and use a slotted spoon to scoop them onto a plate lined with kitchen paper. Season to taste with salt and pepper.

 

For each plate, place about 1 1/2 cups of tater tots on top of the plate and top with 1/4 of the Canadian bacon and 2 poached eggs. Drizzle with the hollandaise sauce.
