The cake has very porous and moist cakes, they literally melt in your mouth, but that's not even the point. The trick is in a small amount of cocoa, which is added to the dough, but masked with red. Ingredients
Flour - 340 g
Sugar - 300 g
Cocoa - 5 g
Salt - 1/4 tsp
Baking powder - 5 g
Soda - 3 g
Eggs - 3 pieces
Vegetable oil - 300 g
Buttermilk - 280 g
Food coloring - 2 tsp
Preparation
Sift flour, salt and cocoa together in a bowl. It is left to wait.
In another bowl put the butter, together with the caster sugar, beat well using the mixer, about 2-3 minutes, then add the eggs, one by one, beating well after each addition and add the vanilla.
In the bowl in which we have the beaten milk we add the red color mixing well. Alternatively we add the flour and the milk composition, in 3 stages, starting and ending with the flour.
The baking powder is dissolved before being added to the dough and is added immediately, stirring gently to incorporate.
The dough is divided into 2 round shapes (about 21 cm in diameter), greased and prepared in advance.
Level the dough with a spatula so that it is uniform.
Put it in the preheated oven at 175 degrees in its center and bake for 25-30 minutes, or, we do the test with the toothpick!
Leave to cool in molds for about 10 minutes. Remove from the pan using a plate and invert the top. When it is completely cold, wrap it in plastic wrap and put it in the freezer for at least 1 hour, so that we can cut it in 2, each top. So we will have 4 sheets.
When the top "cools", we prepare the cream, as follows: Philadelphia and Mascarpone creams mix well with powdered sugar, vanilla, grated lemon peel and its juice in a larger bowl, then add the whipped cream in 2 steps, mixing well after each addition. If the cream seems thinner, put it in the fridge for 1 hour.
The cake tops are cut in half with a serrated knife. The front of the countertop is placed below and the lower one which was on the bottom of the form, with the part where it was in shape, above because it is the most uneven. "Cream" the cake and spread it on the sides with cream. Garnish with sweet or unsweetened coconut flakes, as desired. The cake top should be red and soft.
